Effects of dietary \u00df-glucan on glucose absorption and insulin secretion<br \/>\nwere studied in three 35-kg pigs, surgically modified with catheters in the<br \/>\nportal vein and carotid artery and an ultrasonic flow probe around the portal<br \/>\nvein.  It was found that oat \u00df-glucan as a soluble, viscous fiber decreases the speed of<br \/>\nglucose absorption and reduces peak insulin secretion; thus, dietary \u00df-glucan<br \/>\nin the long term improves carbohydrate metabolism.
