Dietary level of flaxseed"},"content":{"rendered":"<p>Because of conflicting reports appearing daily<br \/>\nregarding fat in the human diet, opportunities exist<br \/>\nfor animal scientists to improve the nutritional value<br \/>\nof fat that animals produce.The objectives of this study were 1) to<br \/>\ndetermine the effect of feeding three levels ( 5 , 10, or<br \/>\n15%) of ground flaxseed to pigs for 25 d before<br \/>\nslaughter on growth and carcass composition, 2) to<br \/>\ndetermine omega-3 fatty acid content of various pork<br \/>\ntissues following feeding of flaxseed, and 3) to<br \/>\ndetermine the effects of dietary flaxseed on processing<br \/>\nand cooking capabilities and consumer acceptability of<br \/>\npork. It was found that increasing levels (0, 5, 10, and 15%) of ground<br \/>\nflaxseed in a swine diet for the final 25 d before<br \/>\nslaughter did increase the content of healthful omega-3<br \/>\nfatty acids in bacon and loin chops. The 15% flaxseed<br \/>\ndiet caused the greatest increase, but consumers were<br \/>\nable to identify bacon from the higher levels in<br \/>\ntriangle tests.
