In recent years, economic pressure on pig production
\nhas resulted in intensification of production methods
\nin order to decrease production costs. As a consequence,
\nanimal health and welfare and environmentally
\nfriendly production have been pushed into the background.
\nFurthermore, the production of lean carcasses
\nto meet consumers\u2019 demands for low-fat pork has resulted
\nin a substantial decrease of intramuscular fat
\nlevels and an increased concern that eating quality may
\nbe consequently reduced (Cisneros et al., 1996).
\nTo face these new challenges, alternative production
\nmethods such as organic livestock farming have been developed. Due to the extensive production
\nsystem there is doubt whether organic production can
\nmeet the demands of high carcass quality (Branscheid,
\n1996). There is, however, very little information on the
\nimpact of organic feeding regimes on growth, carcass,
\nand meat quality characteristics of pigs. The results from this experiment suggest that the organic livestock production standards do not necessarily
\nresult in lower pig performance. The exclusion of synthetic
\namino acids can be compensated for by other
\nprotein sources such as potato protein. The avoidance
\nof supplementation with amino acids favors the production
\nof meat with high intramuscular fat without causing
\nan overly fat pig. The strategy to increase intramuscular
\nfat by a reduced supply of limited amino acids
\nrequires further studies in relation to the impact on
\npalatability. The organic approach provides a tool for
\nproducers to manipulate intramuscular fat levels to
\nmeet specific market requirements with limited impact
\nof on-farm performance. The higher intramuscular fat
\ncontent has higher production costs than the conventional
\nproduct but is in tune with the philosophy of
