As a consequence,<br \/>\nanimal health and welfare and environmentally<br \/>\nfriendly production have been pushed into the background.<br \/>\nFurthermore, the production of lean carcasses<br \/>\nto meet consumers\u2019 demands for low-fat pork has resulted<br \/>\nin a substantial decrease of intramuscular fat<br \/>\nlevels and an increased concern that eating quality may<br \/>\nbe consequently reduced (Cisneros et al., 1996).<br \/>\nTo face these new challenges, alternative production<br \/>\nmethods such as organic livestock farming have been developed. Due to the extensive production<br \/>\nsystem there is doubt whether organic production can<br \/>\nmeet the demands of high carcass quality (Branscheid,<br \/>\n1996). There is, however, very little information on the<br \/>\nimpact of organic feeding regimes on growth, carcass,<br \/>\nand meat quality characteristics of pigs. The results from this experiment suggest that the organic livestock production standards do not necessarily<br \/>\nresult in lower pig performance. The exclusion of synthetic<br \/>\namino acids can be compensated for by other<br \/>\nprotein sources such as potato protein. The avoidance<br \/>\nof supplementation with amino acids favors the production<br \/>\nof meat with high intramuscular fat without causing<br \/>\nan overly fat pig. The strategy to increase intramuscular<br \/>\nfat by a reduced supply of limited amino acids<br \/>\nrequires further studies in relation to the impact on<br \/>\npalatability. The organic approach provides a tool for<br \/>\nproducers to manipulate intramuscular fat levels to<br \/>\nmeet specific market requirements with limited impact<br \/>\nof on-farm performance. The higher intramuscular fat<br \/>\ncontent has higher production costs than the conventional<br \/>\nproduct but is in tune with the philosophy of<br \/>\norganic agriculture.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>In recent years, economic pressure on pig production has resulted in intensification of production methods in order to decrease production costs.
